| American Style Mutton |
Here's a recipe for American-style mutton:
Ingredients:
2 pounds of mutton, cut into pieces
1 large onion, chopped
3 cloves of garlic, minced
2 tablespoons of vegetable oil
1 teaspoon of paprika
1 teaspoon of dried thyme
1 teaspoon of dried rosemary
1 teaspoon of salt
1/2 teaspoon of black pepper
2 cups of beef or vegetable broth
2 tablespoons of all-purpose flour
Chopped fresh parsley for garnish (optional)
Instructions:
Preheat your oven to 325°F (163°C).
Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium heat. Add the mutton pieces and brown them on all sides. You may need to do this in batches to avoid overcrowding the pot. Remove the browned mutton from the pot and set it aside.
In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant.
Sprinkle the paprika, dried thyme, dried rosemary, salt, and black pepper over the onions and garlic. Stir well to coat the ingredients.
Return the browned mutton to the pot and pour in the beef or vegetable broth. If desired, add the red wine for extra flavor.
Cover the pot with a lid and place it in the preheated oven. Let it cook for about 2 to 2 1/2 hours, or until the mutton becomes tender and easily falls apart.
Once the mutton is cooked, remove the pot from the oven and transfer the mutton pieces to a plate. Cover them with foil to keep them warm.
Place the pot back on the stovetop over medium heat. In a small bowl, mix the flour with a few tablespoons of water to create a slurry. Slowly pour the slurry into the pot, stirring constantly, to thicken the sauce. Cook for a few minutes until the sauce thickens.
Return the mutton to the pot and stir to coat the pieces with the thickened sauce. Allow it to simmer for a few more minutes to allow the flavors to meld together.
Serve the American mutton hot, garnished with chopped fresh parsley if desired. It pairs well with mashed potatoes, roasted vegetables, or a side of your choice.
